My name is Haydar Demir. I’m from Cyprus, Famagusta. I was born on November 29, 1994, in Famagusta. I have a small family. There are 1 sister and 1 elder sister. I’m right in the middle. I had a great childhood. My family always was together, especially in aids and New years In 2011, I graduated from high school. In the same year, I tried to get into University. Panettone Pudding

Ingredients:

  • 50g butter, softened( optional)
  • 250 g panettone (About 5 medium slices)
  • 2 eggs
  • 142ml cream
  • 225ml milk
  • 1 tsp vanilla extract
  • 2 tbsp caster sugar
  • Icing sugar, for sprinkling
  • Softly whipped cream, to serve

Method:

  1. Preheat the oven to 140 degrees and grease a 850ml shallow baking dish with a little butter.
  2. Cut the Panettone into wedges, leaving the crusts on.
  3. Butter the slices lightly with the rest of the butter. Cut the slices in half and arrange them in the dish, buttered side up.
  4. In a bowl, whisk together the eggs, cream, milk, vanilla extract and sugar and pour evenly over the Panettone.
  5. Put the dish in a roasting tin and pour hot water around it to a depth of about 2.5cm
  6. Bake for 35 minutes until the pudding is just set- it should be yellow inside and nicely browned on top.
  7. Dust with icing sugar and serve with spoonfuls of whipped cream.

Ingredients:

  • ½ cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ¼ cup confectioners’ sugar for dusting ( I use a sifter to distribute the powder evenly)

Preparation:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.

In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time then stir in the vanilla. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added.

Spread the batter evenly into the prepared pan.

Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack, then turn out into a serving plate. Dust with confectioners’ sugar right before serving.

 

**This simple cake is one of my very favorite recipes year round. I serve it for dessert with fresh fruit or a whiskey sauce, have leftovers for breakfast with fruit and tea, and take it to potlucks with a variety of toppings. You will never go wrong serving this.

Ingredients:

  • 8 slices bacon
  • 2 pounds round steaks
  • 1 T flour (Seasoned with a bit of salt and pepper)
  • 5 onions, peeled and chopped
  • 1/3 c raisins (optional)
  • 1 c peas
  • 2-3 T chopped parsley
  • 1 T brown sugar
  • 1 1/3 c Guinness stout
  • 1 sheet puff pastry
  • Oil

Preparation:

Brown Bacon in frying pan. Crumble into small pieces.

Cut steaks into bite size cubes, roll in flour mixture Brown in Bacon drippings: add extra oil if necessary. When browned place meat and crumbled bacon in a casserole dish.

Sautee onions in the bacon drippings/oil until golden, then add to the meat. Add the raisins, peas, parsley, brown sugar, and Guinness: cover tightly and simmer over low heat for 2- 2 ½ hours. Stir occacsionally and add more Guinness or water if the gravy gets too thick.

Roll out pastry to fir casserole. Place on top of meat mixture and bake according to package directions or until puffed golden.

Yields 8 servings

** You can make the filling ahead of time and reheat just a bit before placing in casserole dish, covering with puff pastry and baking.

Enjoy this authentic italian tiramisu recipe, which came from Dario’s grandmother in Sicily. Over 200 people in Canada and the Us helped us make and eat this tiramisu on our recent 2012 Tiramisu Tour. Everyone agreed, it was the BEST!

Ingredients

  1. 6 eggs , separated
  2. ½ cup sugar
  3. 16 ounces mascarpone cheese, room temperature (We found  Bel Gioioso brand to be the best)
  4. Approximately 6 cups espresso coffee, premade and cooled. (You may need more)
  5. 4-6 oz Dark chocolate, finely grated
  6. 1 package of lady finger cookies- hard, not soft

preparation:

  • Seperate the eggs in two large mixing bowls.
  • Beat the egg whites with an egg beater until stiff.
  • In the second bowl. Beat the yolks with a hand whisk.
  • Add sugar and continue whisking. Add mascarpone and whisk in.
  • Add prepared egg whites and continue whisking IN ONE DIRECTION.
  • Whisk until all ingredients are combined and looks like a custard.
  • Use a ceramic or glass pan (abaout 8 x 10 in size).
  • Dip lady finger cookies one at a time, quickly in cooled coffee.
  • Lay each cookie along the bottom of the pan, forming one layer.
  • Pour about half the mascarpone mixture on top, until it just covers the cookies.
  • Add another layer of cookies dipped in the coffe.
  • Spread a second layer of the mascarpone mixture over cookies.
  • Sprinkie a generous layer of grated chocolate on top.
  • Refrigerate for at least one hour, preferably up to 12 hours.
  • Enjoy!

Tzaziki sauce recipe

 

Cool and creamy this cucumber dip flavored with garlic is the perfect compliment to grilled meat and vegetables.

It’s served on the side with warm pita bread for dipping, and is also used as a condiment for souvlaki.

Ingredients 

Yield: About 2 cups

Strained Greek yogurt 450 ml
Cucumber, peeled 1
Garlic cloves, minced 3
Fresh dill or mint, finely chopped 1 ½ Tbsp.
Extra virgin Greek olive oil 3 Tbsp.
Red wine vinegar 1 ½ Tbsp.
Salt to taste

 

Preparation

  •  Deseed then coarsely grate the cucumber.
  • Squeezeout excess moisture. Mix with yogurt.
  • Add garlic, dill, extra-virgin Greekolive oil, vinegar, and salt.
  • Combine well.
  • Refrigerate until ready to use.

 

Extra tip: Garnish with some olives and slices of cucumber  before serving!
