BETTY SANDS’ Quick Coffee Cake

 INGREDIENTS:

  • 1 and ½ cup all-purpose flour
  •  1 cup sugar
  • ¼ teaspoon salt
  •  2 teaspoons baking powder
  •  2 eggs
  •  ¼ cup vegetable oil
  •  ¾ cup milk
  •  1 teaspoon vanilla
  • 1 cup or more fresh berries( optional )

Topping:

  •  1 tablespoon cinnamon
  •  3 tablespoons sugar
  •  A little oil

Directions:

  • Sift dry ingredients into bowl- or pour all in and stir with a whisk. Make a little well in center of dry ingredients and add two beaten eggs. Fill a cup measure with ¼ cup oil and the rest with milk: (3/4 cup); pour into bowl.
  • Add vanilla
  • Mix together, but no need to beat.
  • Fold in berries(optional)
  • Pour into greased ( or sprayed with PAM) 8×8 cake pan.
  • Jiggle pan a little to make sure the mixture is level- sometimes the center takes longer to bake.

 

For Topping:

Mix sugar and cinnamon with a little oil until crumbly. You can add the topping before baking or right when you take it out of the oven.

Bake at 400 degrees for 30 minutes. Test with a cake tester.

  • Combine the flour, cornmeal, wheat germ, dry milk powder, and salt in a very large bowl. Soften the yeast in the warm water and add it along with the beef broth to the dry ingredients. Mix well with hands for the dough will be very nice. Divide dough into halves and roll each half out on a flouted board to a thickness of ¼ inch. Cut into shapes with a cockie cutter.
  • Place fairly close together on a un-greased baking sheet. Combine beaten egg and milk brush over surface of each cockie. Bake in a 300 degree oven for 45 minutes. Turn off oven heat but leave baking sheet with cockies in the oven to harden overnight. If you lack room in the oven for all of them, then just place them in a dry spot until they are quite hard. Yield Makers 74 two inch cookies with a total weight of 1 lb. 11 oz.

INGREDIENTS:

  • ½ Cup Sugar
  • Butter the size of an egg
  • 1 egg
  • 1 cup flour
  • 2 tsp. baking powder
  • ½ cup milk
  • 1 tsp. vanilla

TOPPING:

  • 6 tbsp. flour
  • 4 tbsp. sugar
  • 2 tbsp. butter
  • 3 tsp. cinnamon
  • ½-1 cup chopped nuts.

Recipe Directions:

Mix together sugar and butter. Beat in egg, flour, baking powder, milk and vanilla. Beat well and pour into a shallow greased pan.

 Topping: Combine sugar, cinnamon, butter and work together until crumbly; add chopped nuts and sprinkle over cake mixture.

 Bake at 350 degrees for 20 minutes.

 PER SERVING: 4 People

 INGREDIENTS: 4 pieces of breast of fowl

1 shallot

1/4 bunch of parsley

1/4 bunch of fresh thyme

2 cloves  of garlic

1 table spoon of lemon juice

2 table spoon of olive oil

Salt

Pepper

For sauce:        1 paprika

1 green pepper

1 onion

1/2 water glass of tomatoes puree

1 water glass of water

   DIRECTIONS:

Rub lemon juice on breast of fowls and wash them. Put the breast fowls in a bowl and add garlic, onion, parsley, thyme, paprika,salt and pepper in it. Put olive oil and leave for rest for few minutes. Put the breast of fowls and 4 water glass of water in a casserole and cook them for 25-30 minutes. In another sauce pan cook paprika, green pepper, onion, tomatoes puree, salt  and water for 15 minutes. Service warm. Bon Appetit!

                 INGREDIENTS:1,5 water glass of milk

1,2 cup of powdered sugar

4 table spoon of cream

1/2 tea spoon of vanilla essence

1 water glass of yogurt

2 leaves of gelatin

4 table spoon of instant coffee

For top coat:Raspberry

 DIRECTIONS: Put milk, cream,vanilla essence and powdered sugar in a saucepan and boil them. Sop gelatin leaves with water. Rest the mixture for 15 minutes tobecome cooler and then add the yogurt and coffee. Pour the mixture in forms and put them in the fridge for 4 hours. Service them with raspberry. Bon Appetite!
